Disney has announced that the highly anticipated Disney Springs two-story, 210-seat wine bar, Wine Bar George, will open this Spring at Walt Disney World. Wine Bar George is the latest creation from Master Sommelier George Miliotes and will be the  first and only Master Sommelier-led wine bar in Florida when it opens.

You may remember that George Miliotes helped open the California Grill at Disney World’s Contemporary Resort back in 1995, and served as the restaurant’s manager from 1995-2002.

Miliotes is bringing back another California Grill veteran to work at Wine Bar George. Ron Rupert will serve as the new venue’s Executive Chef.  In addition to California Grill, Rupert has also worked at Walt Disney World restaurants Jiko – The Cooking Place at Disney’s Animal Kingdom Lodge and Ariel’s at Disney’s Yacht and Beach Club Resorts.

Wine Bar George will offer a wine list of more than 100 selections by the bottle and glass. Its menu will include a selection of small plates, sharable plates, cheese and charcuterie boards and desserts.

Wine Bar George is currently slated to open in Spring 2018. I will add more details to this post as the launch date nears, so be sure to stay tuned!

Update 5/19/18: Wine Bar George is officially open today! The grand opening will occur at 5pm. Normal daily service will begin tomorrow from 11am-2am and reservations will open on May 25th for booking starting June 25th.
